The aim of the project is to isolate birch and spruce hemicelluloses for emulsions and hydrocolloids. Obtained hemicelluloses will be used in food emulsions, creams and other high value applications. Recent research have shown that hemicellulose acts as an emulgator forming very stable emulsions with high antioxidant capacity.

During the project hemicelluloses will be isolated from wood and the fractionation processes will be developed further. Hemicelluloses are used in emulsions and hydrocolloids and life cycle assessment of whole process and products will be carried out.
